Mesmers.
As Bromaortegh said, cry of pain spike (along with assassins promise) can make an all mesmer team destroy anything.
Plus, it has been done before (pre EotN and Ursan). There are several screenshots of an all mesmer team completing FoW and UW on these forums.

I'd say ele's. high fire damage, maelstrom shuts down casters, air ele's to spread blindness and for armor penetration, earth eles can tank, plus some e/mo's for healing.

All Warriors = better have Healing Signet.
All Rangers = better have Troll Unguent.
All Monks = sounds alright.
All Necromancers = steal, hex and summon squad.
All Mesmers = rather interesting: half interrupt, half health drain.
All Elementalist = 2 of each element; sounds alright.
All Assassins = I'd have to think about it.
All Ritualists = ultimate spirit squad!
All Dervishes = tornado of terror.
All Paragons = almost too good to be true.

I agree, mesmers I think can offer the most balanced team (if you include secondary professions). Not to go into too much detail the breakdown could possibly be something like:
2 I-Weps for the Melee
2 Signet of Illusions for monking, one favoring heal one favoring prot.
2 Echo Fast Casting Nukers
1 Echo SS
1 Hex Eater Vortex smite support Mesmer
All would carry Ether Feast for a self heal, and as mesmers already have an advantage for e-management.
It's just too bad there are not 8 PvE Mesmers to put a full group together lol

Ritualists could be fun. They can do pretty much anything and don't need secondary, aka, people would be playing Rts and not whatever-in-disguise.
Necro and Paragon party would be too strong to be fun, heh.

Assasins!!! Spike damage chains even if most chains are nerfed........
a/mo for healing??....... maybe not.....
